I pick high settings and almost all of my games are 100+ FPS with high settings, RTX off, DLSS on where available. I have a 3070 and game on a 144hz, Gsync 1440p monitor. Also a Gsync compatible monitor will help a lot. Next would be settings like RTX (FPS killer) and if a game supports DLSS (FPS booster). If you choose High vs Ultra/Ultimate then you will usually get a boost in FPS without a loss in pierceable detail.
